This is one of my favorite Korean Food. I have been looking for sweet potato/starch noodles for quite sometime now but is always disappointed. So imagine my excitement when I learned that there is a Korean Store right across where my sister works. I instantly asked her to buy me one.
Here's how I cooked Jap Chae.
1. Cook 250g sweet potato/starch glass noodles according to package directions. Drain well.
2. Toss noodles with 1 tsp sesame oil. Cut noodles according to preferred length. Set aside.
3. In a bowl, mix together 2 tbsp soy sauce and 2 tsp sugar. Set aside.
4. Add 1 tbsp cooking oil in cooking pan.
5. Fry 1/2 cup sliced onion and 2 carrots, sliced matchsticks in pan.
6. Add 2 cloves minced garlic, 2 stalks cut green onions, and 1/2 cup sliced shitake mushrooms.
7. Add spinach and soy sauce-sugar mixture.
8. Add noodles.
9. Cook until taste are blended well and ingredients are all cooked through.
10. Turn off heat.
11. Toss noodles with 1 tbsp sesame seeds and 1 1/2 tsp sesame oil.
12. Serve and Enjoy!
